Summer Potato Gnocchi Salads.....3 Healthy Delicious Recipes




Pasta is one of those things it's difficult to leave without, at least for us Italians. If you allow yourself to have within a healthy and balanced diet, you have to watch quantities since 100g has sometime more than 350 calories. Don't forget the extra calories coming from sauces, oil and condiments, cheese and other topping ingredients. Plus, 100 grams of pasta doesn't really satisfy me especially if I am having normal white wheat pasta. However, today there many pasta options which are healthier than this and are also low in calories which means we get to enjoy more of it without the extra calories. One such great option is potato gnocchi pasta. Although, you can eat gnochi all year these work wonders in salads. And by the way, if you love pasta as much as I do, and if you like me want to enjoy it without indulging into too many calories, pasta salads are the way to go. Above are 3 pasta salads made with potato gnocchi. And below are the recipes. So keep reading.....

RECIPE 1: MEDITERRANEAN & CHEESE GNOCCHI SALAD
For the vegetables part of this salad: grill some zucchini, aubergines/eggplants and cut some fresh tomatoes. Season with salt, pepper, oregano and basil. Dress with some olive oil.
For the cheesy gnocchi: simply boil them, and then toss in some soy cream (or other dairy cream) and some sliced cheese until everything is melted and cheesy. You can also add some grated parmesan.
Combine the the vegetables and the cheesy gnocchi and you have got a delicious vegetarian pasta salad.

RECIPE 2: WHITE GNOCCHI SALAD
For the vegetables part of this salad: boil some frozen green beans, slice some cucumber and add some sun dried tomatoes.
For the protein part: boil 1 egg, peel it and slice it. Add some salmon paste flakes to the salad.
For the gnocchi: boil 200g gnocchi. 
Combine all of the above. And dress with some olive oil, lemon juice and mayonnaise.

RECIPE 3: SIMMENTHAL GNOCCHI SALAD
For the vegetables part of this salad: wash and chop some lettuce, add some shredded carrots and sliced cucumber.
For the protein part: boil 1 egg and add it to the salad in the form of slices together with some canned beef in jelly (called simmenthal).
For the gnocchi: simply boil 200g.
Combine everything, season with salt and pepper and dress with olive oil and lemon juice.
