Summer Salads.....for lunch and dinner!

Although salads are becoming more and more popular because they are considered the healthiest dish to eat, especially at restaurants, many still feel sad and bored when thinking about eating a salad as opposed to a burger or a pizza. Well I am sure that if you try the following salads you will feel satisfied and happy not only because these are healthy but also because they look delicious and taste great. Plus they are also very filling and easy to prepare.

SUMMER SALAD 1: Tuna & Olives


Ingredients: lettuce, shredded carrots, 1 can tuna in brine, olives, salt and pepper, oregano, balsamic vinegar, olive oil, salad cream, grated parmesan and 1 slice rye bread. SERVES 1 person.

Preparation: Wash and cut the lettuce; add the carrots and season with salt, pepper and oregano. Then dress it with olive oil and vinegar. In a separate bowl mix the tuna, green olives and some salad cream. Sprinkle parmesan on top of the lettuce and top with the tuna olives mixture. Serve with the rye bread.



SUMMER SALAD 2: Honey Zucchini & Carrots 


Ingredients: 4 medium carrots, 2 medium zucchini, salt and pepper, thyme, olive oil, balsamic vinegar, honey, grated parmesan and 3 Chinese rice wrappers. SERVES 1 person.

Preparation: Wash and peel the carrots and zucchini. Cut the carrots into thick strips and slice the zucchini into circles. Boil the carrots and bake the zucchini with some olive oil. Once ready combine and season with salt, pepper and thyme. Add some olive oil, balsamic vinegar and honey. Sprinkle some good grated parmesan and serve with the rice wrappers dipped into warm water.



SUMMER SALAD 3: Sweet Peaches & Chicken


Ingredients: Lettuce (as much as you like), 250g fresh minced chicken, 6 peaches, salt and pepper, lemon pepper, olive oil, lemon juice, honey, 2 piadine or flat bread, 2 slices cheese and soy spread. SERVES 2 people.

Preparation: Wash and cut the lettuce. Peel the peaches. Cook the chicken with the peaches skin just peeled. Slice the peaches. Season and dress the lettuce with salt, pepper, lemon pepper, olive oil and lemon juice. Top the lettuce with the cooked chicken and peaches. Drizzle honey on top. Serve with a toasted piadina or flat bread spread with butter and 1 slice cheese.



As you realize after reading the ingredients and preparation notes for each salad, the salads are healthy but super delicious. I bet you would like to have one of these right now. The first 2 are also very low in calories as they have around 600 calories including the bread for the first salad and the rice wrappers for the second. The last salad is the one which has most calories because of the piadina which has 400 calories. But by replacing this with some low calorie bread you can bring the calories down to around 700 per person. 

Salads are never boring because you can add whatever you like to them: from vegetables, to fruit, to meats, seafood and fish, and different herbs and dressings. Just make sure you use low calorie healthy ingredients and serve them with low calorie breads if you have to watch your calories. Every now and then you can however indulge in a piece of delicious bread if you are eating a healthy salad with it!
