Summer Polenta: 2 Vegetarian Meals

Lately I have been trying to introduce new foods to make my healthy eating more fun and varied. Technically polenta is not new to me since I had already tried it last Winter. But I only bought it once and cooked it a few times. Plus now that it's Summer I get to come up with different ways to prepare polenta. This latter is gluten free and it provides a long lasting supply of energy, thus making a great lunch choice. Below are my 2  Summer recipes featuring polenta.

You can achieve both recipes by cooking the polenta once and storing half in your fridge. This is great for all of you who are busy working and keeping up with your family because you can prepare polenta when you have the time and then take it out of the fridge and quickly assemble your meals whether lunch or dinner.
How to cook polenta: Simply follow the instructions on your polenta package which would normally involve boiling some water and pouring the polenta slowly stirring for few minutes until it gets sticky and combined. Then pour it in a casserole on some cling foil, let it cool, wrap it with the plastic and then refridgerate it. For both recipes per one person I used 100g polenta which divided into 2 meal gives you about 165 calories from carbohydrates per meal.


The first recipe involves cutting the refridgerated polenta into extra large chips and cooking them with some non stick olive oil spray on a skillet until crunchy on each side. Spread the chips with soy butter and serve them with a green beans, tuna and black olives salad. Top with sun dried tomatoes and 1 fried egg. This way you have got your carbohydrates (just enough to keep you full), your vegetables and your proteins.



The second recipe is some sort of fake chicken escalopes served on a bed of boiled veggies with some lettuce, a healthy dressing and a side of fresh tomatoes. The fake breaded chicken escalopes are simply squares of refridgerated polenta cooked in a non stick pan with some olive oil spray and soy butter until crispy. Top one side of the polenta with cheese and let it melt. For the dressing I used Heinz Original Sandwich Spread. This is super delicious, much better and healthier than fried chicken.
