Eggplant is my favourite vegetable, it always was and always will be. And when I say favourite I mean that I am really addicted to eggplant/aubergines/melanzane however you want to call them. Keeping in mind that I am Italian (I was born in Sicily and lived there for about 14 years) is definitely going to make that easier to understand. Think about pasta alla norma, pizza alla norma, parmigiana di melanzane, melanzane a baccafico, cotolette di melanzane, pasta con pescespada e melanzane, cartucciata di melanzane and many more delicious dishes made with eggplant and you cannot but love this great vegetable. There is only one little problem about being Sicilian and loving eggplant so much......and that's eating too many calories. Although, the food there is definitely super fresh and genuine, it is also very rich and therefore not the best to stay fit, if you eat it every day. This is especially so since all the great dishes featuring eggplant involve frying the eggplant in oil. And eating fried food is never a healthy option, no matter how good and fresh the oil is.
So after years of eating eggplant dishes which were certainly delicious but also contributed to not being able to stay fit and healthy, I came up with many recipes which include eggplant but no frying. They might not be as delicious as the original dishes, but are certainly tasty and most importantly they are healthy. Below is one of such dishes.......stuffed eggplant.

PS. The only change I made from my original recipe (on my blog) was to include shredded carrots and skip ham. I also used less breadcrumbs and cheese to make the meal lower in calories. I also added a boiled egg and served it with boiled broccoli rather than potatoes.
