Low calorie Summer Wraps.....Fresh, healthy, light , easy and tasty!

There is nothing better than eating salads in Summer. Any kind of salad is great when it's so hot and sticky and you want something fresh, cool and quick and easy to prepare. However, eating salads every day can be pretty boring especially if you, like me, are avoiding higher calories carbohydrates like pasta, bread, potatoes, rice and crackers. Salads can be delicious when eaten inside a wrap but wraps can be very caloric too if they are made out of white flour. So what? Should we forget wraps and eat boring salads every day? No, we shouldn't because they are many healthy wraps alternatives. Below is my new creation......

Ingredients:

  • Lettuce
  • chickpeas
  • salt and pepper
  • olive oil and lemon juice
  • canned beef in jelly x 2(only 65 calories per can)
  • lemon pepper
  • light mayonnaise
  • 3 spring roll wrappers
How to make them:
  1. Start by preparing your salad with lettuce and chickpeas. Season with salt and pepper and add olive oil and light mayonnaise.
  2. Then open the meat cans and season with salt, black pepper and lemon pepper. Add 1 tablespoon lemon juice and a teaspoon olive oil.
  3. Prepare your wraps by wetting your spring roll wrappers in hot water. Fill each one with salad and meat on top. Close and enjoy.
