These past two weeks my posts have been all about SPRING. Everyone, has been looking forward to this beautiful season and now that is here we get to enjoy not only the great weather, lighter clothes and brighter makeup but also delicious food.......still healthy though!
After a cold winter spent eating steaming soups, hot boiled vegetables and other warm dishes it's finally time to start eating some fresh salads once again. The beauty of salads is that you can come up with several variations, and they all will be yummy........The important is to keep changing the salads you eat otherwise you will get bored and might be tempted to eat bad carbohydrates with them (like white bread) and although doing so every now and then is fine, if it becomes a daily habit it will definitely ruin your shape. And we don't want that......do we????
Although, I only write these kind of posts on my food blog which is http://alessiascues.blogspot.com/, I have decided to post this delicious recipe here for my iLoveTOBEFAB readers to enjoy during SPRING and the coming SUMMER.
This SPRING SALAD is super easy to prepare. It only took me few minutes.......and the result is delicious.
You will need the following ingredients...........
- 2 cups boiled frozen vegetables mix for soups (the small veggies or else choose your own fresh vegetables and diced them thinly)
- 3 medium tomatoes washed and peeled
- 1/2 cup beets in a jar
- 1/2 cup shredded carrots
- 1 cup canned chickpeas
- 4 surimi crab sticks
- salt, pepper and oregano
- olive oil and mayonnaise
The preparation is super easy.
You just have to combine all the above ingredients (except for the surimi sticks) and season them with salt, pepper and oregano as well as dress them with 2 tablespoons olive oil and some mayonnaise (not too little not too much).......Then top them with the crab sticks which I simply cook by immersing them into the boiling water for less than 5 minutes.....And you have prepared yourself a refreshing tasty salad which is great on its own for a light lunch or served with some grilled fish but I am sure it will taste sublime if added to boiled pasta as a pasta salad.......
